Pan Fried Zucchini Slices (Aehobak Jun)

This is a go to recipe for when you are in a pinch and don't have enough side dishes for a meal, or you just want a comforting snack. It's basically foolproof because in our opinion zucchini is delicious cooked in any way.
Ingredients:
- 1 Korean zucchini (you can substitue with other types of zucchini)
- 2 eggs
- 1/2 t salt
- 1/2 cup flour
- Dipping sauce (1T soy sauce, 1t rice vinegar, 1/2 t red chili powder, sesame seeds)

1. Slice the zucchini into 1/4" slices.

2. Beat the eggs with the salt and heat up frying pan with a bit of oil.

3. Dredge the zucchini slices in the flour.

4. Dip into egg.

5. Put on the hot pan. Repeat steps 3-5 for each slice.

6. Flip in a couple minutes when the bottoms are golden brown.

7. Enjoy with the dipping sauce.

Is the secret to Korean food it's simplicity? Your recipes seem so delicious but incredibly easy with only a few ingredients, (as long as you can get them of course). I'm thinking of trying to make my own Gochujang paste, what do you think, have you tried?

  3. Thanks for another classic. I've always been too intimidated to cook Korean food, but your blog is making it look less scary. This is certainly a simple dish and yet I would have never thought to make it before now.

  9. This was one of my favorite dishes while living and teaching in Seoul. Thank you so much for posting it! I have a few questions about sides and sauces I was never able to get the name of, such as the 'red bean and garlic sauce' served at BBQ. Can you recommend a recipe?

  12. Hi,

I've seen alot of the pancake recipe's ingredients that say floor but actually did not mention which kind of floor. I'm actually wondering what types of floor is most suitable for making any kinds of korean pancakes. Can You let me know? Thanks! (:

You can use all purpose flour. Also, don't forget to use icy cold water.
